Open-Pollinated . Heirloom :: Milky Way Einkorn has given very consistent yields in both fall and early spring plantings. Heads in early July for August harvest. Stalk strength is good with very little lodging.
Optimal seeding rate is 20 seeds per square foot, best sown 8-10 seeds per row foot in rows that are 6″ apart for ease of cultivation and harvest. Larger plantings average 75-80 lb per acre.
Einkorn is the oldest grain in history. It has a deep root system that helps the grain contain roughly 30% more proteins, manganese, riboflavin, zinc, magnesium, thiamin, niacin, iron and vitamin B6. It contains all of these essential nutrients while having 15% less starch translating to fewer carbohydrates than modern wheat. Many people that have gluten sensitivities have no problems with baked goods made with Einkorn grain. It is the primary grain we use for pizza crust, cookies, crackers, desserts that call for flour, and breads. When using it in bread some people like to add another grain that has a higher gluten content so you get the expected rise. Einkorn has a great flavor, especially when used in a recipe that has some sugar in it as well.
